What I Ate Wednesday

Okay, I'll admit: my Wednesday was not so nutritious. But! The moral of the story is: as long as you burn the calories you put in, you're fine. At least, that's what I'm telling myself. As a new FitFluential Ambassador I'm only just opening up to the trending food posts. So today, I christen my blog with What I Ate Wednesday.

I started off the morning by making French toast for me and Spencer. Sleepyhead over here sleeps a lot (or I sleep very little) and rumble-rumble went my stomach. I decided to haul my butt out of bed and make something after hearing my stomach rumble a third time. These aren't your ordinary French toasts. Spencer has an insane sweet tooth so I decided to make something special.

I crushed Graham Crackers and sprinkled some cocoa powder over them and mixed this together. After dipping the slice of bread into the egg and milk (and organic corn syrup--it's organic, don't kill me!) mixture I dredged it in the Graham Cracker and cocoa powder crumbs. This was then griddled up and then served with a nice helping of chocolate caramel filling and topped off with whipped cream. Healthy? Not in the least. Sweet? Definitely. This recipe will be up in a bit :)

It was time to bike off this breakfast, and the only way to do that was to do a 13-miler along the Lake Shore path. After about an hour and a half of working our legs overtime with headwind on the way back, I think it's safe to say that the calorie-rich breakfast was burned off. Again, it's what I'm telling myself.

For lunch I had ginger chicken and white rice. This is my mom's recipe, and every time I ask her for a "recipe" she tells me she doesn't know how much of each thing she uses. I will post a recipe up for this, however, because the rest of the world can't rely on my mom's eye-balling to recreate such a delicious meal.

There's this thing called Cadbury Almond ice cream bars and I had one of 'em. So what? It's Wednesday! I needed a snack! I should note here that I also ate some Sun Chips. I'm sorry...a girl needs to snack, after all.

Dinner was a cheat. I can't do everything from scratch all the time and there's a reason there are some good brands I stay loyal to for food preparation. Enter StarKist albacore white tuna packs. I mixed this with some mayo, olive oil, and spices and ate this now-curried tuna "salad" with some saltines (Sky Flakes, to be exact--Filipino represent!). I'd say it was a satisfying enough meal and about 290 calories. Not too shabby!

Dessert? Some leftover lemon mousse, of course! Although, by this time my mousse has been in the freezer for so long that it has turned into a wonderful lemon ice cream. Very silky, very delicious! I don't want to brag, but I think I had a pretty great day of eating,  no?
xo,
k.
